1. 气味是如何被感知的

众所周知,我们能用鼻子闻气味。那是因为我们的嗅觉系统位于鼻腔内,鼻子里面有数以百万计的嗅觉受体。嗅觉受体都是蛋白质,每一种受体都对应着一种或多种气味分子。当气味分子与其对应的受体结合时,这会触发一系列生化反应,并将信息传递给大脑中的嗅觉中枢,让我们就能闻到不同的气味了。不同的气味分子和不同的嗅觉受体就可以组合出成千上万种化学反应,让我们感受到或芬芳、或辛辣、或腐坏、或呛鼻的各种味道。

1.How Odors Are Perceived:

As we all know, we perceive odors through our sense of smell. This is because our olfactory system is located in the nasal cavity, which contains millions of olfactory receptors. Olfactory receptors are proteins, and each type of receptor corresponds to one or more odor molecules. When odor molecules bind to their corresponding receptors, a series of biochemical reactions are triggered. This information is then relayed to the olfactory center in the brain, allowing us to perceive different smells. With various odor molecules and different olfactory receptors, thousands of chemical reactions can occur, giving us the ability to sense a wide range of aromas, from fragrant and spicy to foul and pungent.

Odor molecules can have various sources, originating from plants, animals, chemical synthesis, and natural substances. It's the diversity of odor molecules that enriches the world of scents. Odor molecules are typically organic compounds composed of carbon, hydrogen, oxygen, and other elements. Despite their diverse chemical structures, they share common characteristics, most notably volatility and the ability to carry information. This is why we can detect a particular odor from a distance and make educated guesses about what is emitting that scent.

This happens because the sense of smell is closely connected to regions in the brain responsible for emotions and memories.         

Odors can also influence our emotions. Some scents can relax people, while others may cause discomfort. This is why people have developed "aromatherapy" to harness the effects of odors for therapeutic purposes.

The perception of odors varies from person to person, primarily due to differences in genetics and life experiences. For genetic reasons, some people have a higher number of odor receptors in their nasal cavity, and these receptors may be more potent, making them highly sensitive to smells. In contrast, others may not be as sensitive to the same odors.Furthermore, personal experiences and cultural backgrounds also influence how individuals perceive and evaluate odors. This makes odor perception a highly subjective sensory experience.

The Olfactory World in Daily Life: We are surrounded by various odors every day. "Food is the paramount necessity of the people," so the most common and recognizable odors are associated with food. When we think of food, we often immediately think of its "taste." But what is the relationship between taste and smell? The answer is nuanced – they are closely related yet distinct. Taste is the perception of chemical substances in food by taste buds in the mouth, whereas smell is the perception of odor molecules released by food in the nasal cavity. Odors play a crucial role in the cooking and tasting of food. The chemical components in food are released as odors when heated or cooked, and these odors, in combination with our taste, influence our perception of food.

比如香菜是中餐中经常会使用的调味香草。香菜之所以能调节气味,是因为香菜叶子中富含醛类物质,包括癸醛、2-癸醛和2-十一烯醛,这些物质都是香菜芳香气味的来源;而榴莲的果肉以含硫化合物为主,这些含硫类化合物具有刺鼻的味道,而在人体的排泄物中,也含有大量的“含硫化合物”,所以大多数人一闻到榴莲,都会觉得它其臭无比;苹果的整体香气不仅与香味物质含量有直接关系,还与其种类多少相关。不同成熟度的苹果香气物质成分存在较大差异,未成熟果实的挥发性物质以己醛、2-己烯醛等为主,而成熟果实挥发性物质以酯类和某些醇类物质为主;葡萄的香气成分主要包括萜烯类、C6醇类、C6醛类、芳香醇类、吡嗪类等化合物。        

For example, cilantro is a common herb used in Chinese cuisine to add flavor. Cilantro can influence odors because its leaves contain aldehyde compounds, including decanal, 2-decenal, and 2-undecenal, which are the source of cilantro's aromatic scent. On the other hand, durian fruit flesh mainly contains sulfur compounds, which have a pungent odor. Interestingly, these sulfur compounds are also found in human excretions, contributing to why most people find the smell of durian extremely unpleasant. When it comes to apples, their overall aroma is not only related to the quantity of aromatic substances but also to their variety. The aromatic substance composition varies significantly in apples of different ripeness levels. For instance, volatile substances in unripe fruits are primarily aldehydes like hexanal and 2-hexenal, while ripe fruits feature esters and certain alcohol compounds as the dominant volatile substances. Grapes' aroma components mainly consist of terpenes, C6 alcohols, C6 aldehydes, aromatic alcohols, pyrazines, and other compounds.

The chemical properties of aromas are also widely used in therapy, known as aromatherapy. This therapy employs aromatic compounds to improve physical and mental well-being. For example, the scent of lavender is believed to have a relaxing and calming effect, while the scent of lemon can be invigorating. Aromatherapy often involves the use of essential oils, which are volatile compounds found in plants and act through the inhalation of the scent receptors in the nose.

The strength and types of scents are related to genetics and the immune system. For example, male animals use scents to attract females for mating and reproduction. Male musk deer, for instance, secrete musk to attract female musk deer.
